Quick and Easy Shepherd's Pie

This is one of my favorite comfort foods - nothing healthy about it, but you could probably modify it to make it less "comforting".


1 lb ground beef

1 package chili (or taco) seasoning mix

3/4 cup water

1 package of frozen mixed vegetables (peas, carrots, green beans)

1 cup shredded colby jack cheese

1 package of instant mashed potatoes


Brown the ground beef, drain and add the chili seasoning, the water, the vegetables, and half of the cheese. Mix them well. I add in the vegetables while they are still frozen for a little extra water in the mix. Spread them into a greased casserole dish that is at least 8" square and at least 2" deep. Cook the mashed potatoes according the the directions and then add them on top of the beef mixture. You want them to sit on top of the mixture and not be mixed in. Then spread the rest of the cheese on top of the mashed potatoes. Bake at 400 degrees for about 30 minutes or until the cheese is brown.


Modifications:

I LOVE cheese and mashed potatoes so I usually double mine (which is what the pictures show). It doesn't change the end result other than you have more cheesy potatoes when you're done.


You could substitute a different ground meat (like chicken or turkey). It shouldn't affect the end result because you are using the seasoning mix.
