Quick and Easy Chicken Tortilla Soup

I really don't know a good name for this one. It makes me laugh when I see someone list a recipe and it seems that the name of the finished product has every ingredient listed.

Cost is about $10.00

1 can of red beans (drained and rinsed)

1 can of black beans (drained and rinsed)

1 can of corn (not creamed, drained)

1 can of Rotel tomatoes

1 package of taco seasoning

2 cans of chicken broth

1 can of chicken meat (drained and broken apart)

1 can of green enchilada sauce

Put all of the ingredients into the crock pot, stir, and let cook. 1 hour on high heat, 2 or more hours on low heat.

Honestly, how long it takes to cook depends on you. Once you get it hot, it's ready to eat.

Modifications:

While some of the ingredients could be switched out (you don't have to have chicken meat, or you could try it with beef or turkey), I strongly recommend not trying red enchilada sauce instead of the green. There is a difference and it does make a (negative in my opinion) difference.

You could do this on the stove top in a large pot.

It's going to be spicy (which is why you need two cans of chicken broth). You could probably switch out the taco seasoning with something similar to tone it down.

Before serving, you could add tortilla strips, rice, cheese, or sour cream to add a little more "umph" to the dinner.
