Impossible Taco Pie

Just for the record - I do cook with meat other than hamburger. I just tend to buy a large package of hamburger and then cook it at once and divide it up to use over a few days. With that being said, here is the recipe.


1 lb hamburger

1 medium onion (about 1/2 cup) chopped)

1 package taco seasoning mix

1 can (4 oz) chopped green chilies (drained)

1 cup milk

2 eggs

1/2 cup Bisquick mix

3/4 cup Colby Jack/Monterey Jack/Cheddar (your choice)


Preheat oven to 400 degrees. Brown the hamburger with the onion and then drain. Add the taco seasoning and green chilies and mix together. Spread this out in a greased 9" pie plate. In a separate bowl, mix the milk, eggs, and Bisquick and stir with a whisk until smooth. Pour this over the hamburger mix. Cook for 25 minutes (until a knife inserted in the center comes out clean) then top with cheese. Bake for 8-10 minutes longer, remove, let sit for about 5 minutes then serve.


On a side note - the pictures show a 10" skillet because I was lazy and decided to bake it in the same pan that I browned my hamburger in (I did drain the grease out). It still turned out well, but it was a bit flat because it was spread out.


You can garnish this with some lettuce, fresh chopped tomatoes,

salsa, sour cream, guacamole, or whatever else you like on your tacos.
